i'll have some of that.

it's no secret to anybody, especially my pants, that i'm gaining weight at an alarming rate. thing is, i just want to eat food. lots and lots of food. so what's a girl to do, right? yes. cook and feed the beast. hey, it's winter (almost).

anyway, found this recipe a couple days ago. it seems so REGULAR, but still kind of intriguing. i wonder if any more "seasoned" cooks than me ( you know who you are) might offer suggestions/substitutions to gourmet this up?

and yes, i am thinking the whole stick of butter probably should go....!

Ack! My suggestion would be to substitute everything in the recipe for something else.

Ok, that wasn't very nice. I have learned in five years of marriage that anything with "cream of anything" soup is going to be a dud at my house. Also, Velveeta is NOT CHEESE. It does not belong in your body, it is bad.

It looks like you're craving comfort food, give me half a day and I'll find you a better recipe.

yeah.

my bad, girls, i should ask CAREY how to alter this recipe, not you guys!

and annie, if you make cookies from a scoop out of a tub, i am not sure i can take your advice :)

i dont really like cream of whatever, but what do you REPLACE IT WITH? that was the question!

There is no replacement for cream-of-whatever, which is why the whole recipe had to go. It's just a fact of our midwestern upbringing that we have to face head-on and get over.

I don't know who your friend Anne is, but she seems very wise. :-)

First of all... I am really starting to like your friend Karen!
Second... I make all my cookies-no lyin'!
and finally... while I don't know how it would turn out... my thought on making a *real* cream of mushroom something or other would be to sautee chopped onions and garlic in a little butter then I would add some heavy cream and chicken stock to the saucepan and reduce for 30 minutes at a really low simmer (stir stir stir!) add mushroom right at the end and remove when the mushrooms are fragrant. salt and pepper to taste. that would be my idea. oh yeah... and ALWAYS use real cheese preferably sharp!

i am glad to have a couple of actual classy friends. in karen's case, it is literal, no? you two would get along very well i think :)

thanks girls. i will try to make a real cream sauce as soon as i go shopping ;)

and yes, velveeta is just plain wrong.

anne--if you haven't started yet, you really do need to get in on karen's blogs. she's my best friend from high school and she has recently been abducted by martha stewart. back in the day, she burned just as much popcorn as i did. she grew out of it, and i'm still learning that you can't use cream of anything soup to cook with? serious? sigh. who makes all these rules anyway?
