sustenance


so, weekends are for cooking. at least, mine usually are. this weekend, i decided to break out the taco recipe, because i had a couple of #s of hamburger, looking at freezer burn if i didn't get them used.

unfortunately for me, i forgot to buy taco spices (i usually just buy those little packets, doesn't everybody)? but, after a quick look at the internet, i found a recipe....why did i not think to look for this before? taste was similar, so no need to buy those little packets again...

Taco Seasoning:

1 T. chili powder
2 t. onion powder
2 t. dried oregano flakes
1 t. each ground cumin, garlic powder, paprika, and sugar
1/2 t. salt

Mix together and add to 1-1.5 # browned hamburger, and 1/2 c. water. Simmer for a few minutes to mix flavors.


in other, sadder news, my trusty breadmaker took another careening trip off the kitchen counter on friday, shattering the lid, and making for an awful, rumbly sound because the pan no longer fits snugly into the base. it still works, thankfully, but the 40 minutes of noise that sends Siesta to the basement is not pleasant.

i went thrifting for one on saturday, to no avail. does anybody have a fave machine they use, should i have to go buy a new one? mine is a breadman plus, but if i get a new machine, i would probably prefer one that makes a horizontal loaf. i rarely bake my bread in the machine, usually remove it and put it in a pan so it looks like normal bread.

perhaps now would be a good time to explore a low-carb diet! ha.

My sister in law has the horizontal bread one, she doesn't like it either... she still makes her loaves in the oven.

I like my OSTER.

It's almost as easy as the bread machine. Just pour in your yeast and warm water into the bowl, let it do its thing for 10 minutes, then slowly mix in the flour and knead away. Sometimes I hand knead after using the dough hook, but you don't "need" to :-)

Made baguette bread this weekend. Haven't mastered the crispy outside, chewy inside thing just yet, but trying.

Hmph. When I suggested that you don't need a bread machine, I got a rather snide response!

I am a big fan of the dough hook, and also of the food processor, which works magic for smallish, whitish loaves. Haven't kneaded in, well, ever.

um, yes, i am sorry about that. giving up a beloved bread machine is hard.

actually, i am looking for easy. apparently, easy is the most important thing at this point, because when Phillip asked why i don't just make it "by hand," i about slapped him!

laziness is not something i should boast about.

Taking hold of modern technology in order to free up some of your valuable time is NOT laziness.

have you tried spritzing with water every 5-10 minutes while it's baking? Crunchy on the out, soft on the in...

p.s. I would LOVE a stand mixer with a bread hook, however a $5 bread machine from a garage sell is a much cheaper alternative for the time being. I NEVER bake in mine, either.

I will definitely try that. I tried putting a pan of water on the bottom of the oven to steam, but it didn't seem to make much difference.

Just don't expect it to get really brown, mine has yellowed a bit, but I don't know how to get the dark brown color without burning the loaf...
