monday greys



thanks to all of your tips about making bread dough, i think i am going to be fine without my trusty bread machine. the dough hook on my kitchenaid works fine, without a ton of mess.

however, i wish somebody would tell me how to make a great, light loaf of whole wheat bread. this loaf LOOKED good, but was kind of heavy and grainy. and i also made whole wheat pizza dough this weekend, it was just kind of ... wrong.

i guess i am a white bread girl!


having a hard time getting motivated today.

Here is my fave wheat bread recipe. I usually cut it in half (even my jumbo mixer doesn't want to work hard enough to do the full recipe) and then form two loaves, which I bake on a stone.

You could always meet in the middle! I love this recipe...don't forget to add a bit of flax seed, too!

Light Wheat Bread

4-5 cups all purpose flour
1/2 cup whole wheat flour
1 Tbsp sugar
1 Tbsp salt
2 pkgs (1/4 oz. each) active dry yeast
1 3/4 cups water
1 Tbsp butter

In a mixing bowl combine 2 1/2 cups all purpose flour, whole wheat flour, sugar, salt and yeast. In a saucepan, heat water and butter to 120-130 degrees. (I just heated it until the butter was melted.) Add to the dry ingredients; beat until smooth. Stir in enough remaining all purpose flour to form a stiff dough. I barely used 4 cups. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes (It took me about 10). Cover and let rest for 20 minutes.

Divide dough in half; shape into loaves. Place in two greased loaf pans. Cover and refrigerate for up to 12 hours. Remove from the refrigerator; let stand in a warm place for 30 minutes. Bake at 400 for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.

yield: 2 loaves

Note: To bake without refrigeration, cover dough and let rise in a warm place until doubled, about 1 hour. Bake as directed.
