super day



go team go!

finally i got a chance to watch a whole football game with phillip. well, perhaps i have had other chances, but just not taken them :) ha.

anyway, we enjoyed the super bowl yesterday. the snacks rocked - homemade calzones, which i must admit i excelled at creating; chex mix, and soda. we did not go crazy, but had plenty to eat!

early on, we decided to root for the giants. i am not much of a fan of football, unless i have someone to cheer for. funny thing is, i remember eli manning not for his famous brother, but for his DAD, who i watched way back in the 70s. i grew up watching football, but stopped sometime around the early 80s when i became an "artist" instead. nice to go back to my roots!!!

so, when the winning touchdown happened, both phillip and i jumped off the couch, cheered, and hugged each other. it was really really fun to watch!


what's next for me? nascar?

Will you have to grow a mullet and take up smoking and wear those gaudy neon t-shirts?

i hate to say it, but race cars are in my blood also. my uncle raced sprint cars while i was growing up, and BOTH friday and saturday nights were devoted to the sport.

no mullets, smoking or bad tshirts were in the family back in the 70s, but who knows? maybe!!!

oh, not really a recipe :)

homemade pizza dough, risen in the bread machine....then divided into 6 pieces. let em rest for 10 minutes while i got the "stuff" ready, then a quick roll to about 7 or 8 inches...very NOT round pieces :)

added Napa Valley Bistro (yum!) spaghetti sauce, pepperoni, and mozzarella cheese, then sealed them with egg wash, and brushed egg on top. baked for 15 minutes, took half out to cool and put in freezer for later, continued baking for 15 more minutes. 375.

i wish phillip ate vegetables, then the filling would have been fancier :)

but the crust was SO good!!!!! oh. i dusted the cookie sheet with cornmeal. i think THAT is the secret!

MMmmmmmmm. Was planning on lentil soup for dinner...am rethinking that plan.

Ok, so how much sauce? How much cheese? How much filling? It's been awhile since I tried these, and I distinctly remember having too much filling and not enough sauce.

i blobbed it on there pretty good. to be truthful, some of em kind of broke around the edges :)

oh. oh. one thing i DID do is put some holes in the tops of the dough so the heat could escape. i think that is necessary too.

so let's say:
2-3 T. sauce
1/4 cup cheese for each one.

good thing the dough is stretchy :)

One more ?. My pizza dough recipe is good for one crust. Should I double it to get six calzones??

now back to football. football is good. i was rooting for the underdog too.

did you guys know that a robber broke into Papa Mannings house and stole the autographed Peyton jerseys but left the Eli jerseys sitting there?

bet that robber is kicking himself today.

okay, so here is the dough:

1 c. water
4 t. olive oil
3 c. bread flour
3/4 t. salt
1 t. bread machine yeast (i think that is equivalent to 1 packet)

So. Lentil Soup with Oatmeal Twists tonight, b/c I don't have the cheese. Pepperoni, bell pepper and mushroom (or olive) Calzones tomorrow. Thanks for the inspiration! I'm especially looking forward to the leftovers.

YEAH!!!!!! The brothers back to back wins!!! I am so excited. I was the only one with a happy smile after the game. Yeah!!!

Oh, Which cookbook did you get the term "blobbed" I would like to know exactly how much that is. :.)
